What is Malva Pudding?
Malva Pudding is a sweet decadent caramelized South African dessert soaked in a tasty warm butter sauce, topped off with warm delicious custard or cream.
Where does it Malva Pudding originate ?
According to culinary historian and cook book author Magdalene van Wyk the word Malva is derived from the Afrikaans word "Malvalekker" meaning "marshmallow".
"Malvalekkers" are old fashioned sweeties made from the marshmallow plant. The marshmallow plant gave these infamous sweeties their sponginess. The theory is that the texture of the pudding resembles that of a marshmallow, springy and light.
There are other theories about the pudding like it was named after a lady named Malva.
The word Malva is also derived for the word geranium and some think that it was originally flavoured with the leaves of the rose scented geranium called pelargonium that is native to South Africa.

Step 1: Pre-Heat Oven 180C / 356F
Step 2: Beat your sugar and eggs together until they nice and fluffy
Step 3: Add your jam and beat until creamy and set aside
Step 4: Mix dry ingredients together
Step 5: Melt the butter into a saucepan

Step 7: Add the dry ingredients to the egg mixture and alternate with the milk mixture until well combined
Step 8: Pour your pudding into an oven proof dish and bake for 30 minutes
Step 9: When your pudding is ready, its time to make your sauce

Step 10: Melt all your sauce ingredients together, be careful not to let it boil so that the your liquids do not evaporate

- 1 Cup Of Castor Sugar
- 2 Free Range Eggs
- 1 table spoon apricot jam
- 1 1/4 cups of cake flour
- 1 teaspoon bicarbonate of soda
- Pinch of salt
- 2 Table Spoons Of Butter
- 1 Table Spoon Vinegar
- 1/2 Cup Of Milk

- 1 Cup Of Cream
- 115g of butter
- 100g of sugar
- 1/2 cup of brandy/water/orange juice
