Biltong is cured with vinager, salt and spices and is dehydrated using forced fanned air for 3-5 days. All vitamins, iron, enzyme and minerals are intact which is good for you.
Jerky is usually oven baked for 12 hours in a dehydrator, smoker or iven and is seasoned with a marinade and dried.
